Andrei Lussmann’s Wild Rabbit & Pancetta Meatballs (Croquettes)

SERVES: 6
DIFFICULTY: Easy

 

Ingredients

300ml of Milk

40g of Wild Mushroom picked & shredded

60g Pancetta finely diced

85g of Rabbit, cooked & shredded

3 Sprigs of Rosemary chopped

200g of Shallots finely chopped

40g of Butter

80g of Plain Flour

8g of Cumin

1 Portion of Seasoning to taste

Method

STEP 1
Melt butter, fry off pancetta until caramelised

STEP 2
Add shallots, mushrooms, rosemary and caramelise

STEP 3
Add cooked rabbit

STEP 4
Blend in the flour & cumin

STEP 5
Then add the warm milk slowly, blending until smooth

STEP 6
Then chill

STEP 7
Roll into 15g balls

STEP 8
Pass through flour, egg & breadcrumb

STEP 9
Place croquette in the fryer at 180˚c and cook for 2 to 3 minutes, or until above 75˚c.
Do not overcook or they will burst!

STEP 10
Season, serve and enjoy.
